  2001-present        Associate Professor and Extension Food Specialist, Department of Nutrition & Health Sciences, University of Nebraska-Lincoln, USA, food literacy, teaching scientific principles of food preparation and food safety and sanitation.

  1999-2000         Research Associate, USDA-ARS-DB National Rice Research Center, USA, research on the texture and flavor of Japanese and aromatic rice.

  1996-1999         Research Assistant Professor, Department of Food Science & Nutrition Tuskegee University, USA; taught sensory evaluation, developed edible peanut protein film, and biodegradable paper

  Research Interests:

  I conduct extension programming in the area of food literacy. My extension programming enhances the ability of consumers to understand food. An understanding of food includes nutrition, food safety, food preparation, and the relationship between food and health.
