The world faces the challenge of increasing the food supply with limited amounts of water in order to satisfy both a growing population and an increasing demand for higher quality food. The University of Nebraska has formed the Daugherty Water for Food Institute with a global mission of addressing this challenge through teaching and research. I will describe the Institute’s programs generally and then more specifically activities we are undertaking or considering in China. I will use the experience in Nebraska in 2012 as an illustration of how science can reduce the consequences of a lack of water.
