Dietary fiber is one of the seven nutrients in human body and plays an important role in health. Dietary fiber comes from a wide variety of sources, but there is a lack of systematic research on the application mechanism of dietary fiber in food processing and its precise nutrition regulation on human health. In this report, arabinoxylan was extracted from wheat bran by-product in wheat processing, and its functional and molecular characteristics as soluble dietary fiber were studied. The relationship between arabinoxylan and phenolic compounds was elucidated, the structure-activity mechanism between arabinoxylan and starch was analyzed, and the nutritional regulation mechanism of arabinoxylan in the application process of baked food was explored. This study provides a theoretical basis for precise nutritional regulation of dietary fiber.
