　　Research Interests:

　　My lab focusses on the protein chemistry of food allergens, and on the mechanisms by which proteins enter the human body to sensitize and elicit symptoms. The primary tool we use in these studies is protein mass spectrometry. Particular areas of interest are the detection of food allergens using mass spectrometry, protein transport across gut epithelia, predicting allergenic risk caused by novel foods (especially food insects) and the analytical control of allergen-containing biopharmaceuticals.
