Research Interests:
1. Product and process validations for food safety
a) Evaluating and optimizing chemical antimicrobial interventions for pathogen reduction in raw meat and poultry matrices, including pet food ingredients.
b) Determining the efficacy of clean-label antimicrobials and nitrite replacers on the microbiological safety and quality of processed meat and poultry products.
2. Growth, survival, persistence, and inactivation of bacterial and viral pathogens in foods and the food processing environment
a) Evaluating and validating microbiological predictive modeling for the growth and inactivation of Salmonella and Shigatoxigenic E. coli (STEC) in raw meat and poultry matrices under simulated processing conditions.
b) Determining viral persistence on and transfer from simulated food contact surfaces and food packaging materials.
