Research Interests:
My research has been mainly focusing on developing and using non-traditional thermal food processing technologies of electromagnetic heating (microwave and radio frequency heating) to improve food quality and safety through modeling and experimental approaches. I am also interested in using pulsed electric fields (PEF) technology to enhance extraction of bioactive compounds from vegetables and fruits, and developing integrative models for understanding the nexus of food-energy-water.
